Green Chile Quesadillas

Wine: Georges Duboeuf, Merlot, France
Georges Duboeuf Merlot, Vin de Pays d'Oc. Typical Merlot, with an added sweetness that is wonderful through every sip.
 
Yield: 6 servings
2 cups SARGENTO® Fancy Shredded Monterey Jack or ChefStyle Shredded Mild Cheddar Cheese
1/2 cup (4-ounce can) ORTEGA® Diced Green Chiles
1/2 cup whole kernel corn
1/4 cup (about 2) chopped green onions
6 (6-inch) fajita-size flour tortillas
ORTEGA® Thick & Chunky Salsa
Chopped fresh cilantro (optional)
Procedures
  1. COMBINE cheese, chiles, corn and green onions in medium bowl.
  2. Spread 3/4 cup cheese mixture on one tortilla; place second tortilla evenly over mixture.
  3. SPRAY skillet with nonstick cooking spray; place quesadilla in skillet.
  4. Cook each side over medium-high heat until golden brown and cheese is melted.
  5. Repeat with remaining ingredients.
  6. Serve with salsa and cilantro.
