Sea salt is a product of nature, unlike highly refined granular
salt that contains chemical additives such as bleaches and anti-caking agents.
Unrefined sea salt is rich in naturally occurring minerals and elements

Fleur de Sel - Brittany, France
This naturally flavorful salt has been harvested by hand since the 7th century
from the sea surrounding the island of Re on France's Atlantic coast near La
Rochelle. The waters here are among the cleanest in the world and yield salts
rich in minerals that have the taste of the sea. This is a world apart from sea
salts chemically-produced and merely containing sodium chloride. Literally
meaning the "flower of salt," it is a fine, pure, white salt raked from the thin
surface layer of man-made bays just off the shore. Blooming in summer, it
develops a pink tinge and an aroma of violets. The crystals look like little
snowflakes. This is the salt that many professionals prefer to add complex taste
and bring out the flavors of food. Fleur de Sel is sought by connoisseurs for
its incomparable flavor, delightful consistency and natural richness. It also

Da Morgada Sea Salt, Portugal
Whereas the Egyptians were the first civilization to evaporate sea water
methodically in order to extract salt, the Phoenicians brought this early
salt-gathering technology to Europe. The presence of Roman ruins in the Algarve
region of Portugal suggests that the Romans produced salt there; certainly by
the year 1000 the Algarve was sending salt to the rest of Europe, and in the
15th and 16th centuries salt helped Portugal to consolidate its position as a
world power. Today, Da Morgada salt is still collected by intensive labor,
avoiding machinery. It is harvested from the waters of the Atlantic Ocean.
Collected between late June and late August in the Algarve at Tavira in the Ria
Formosa Natural Reserve, this artisanal salt has among the best conditions for
production. Its area of production is free of pollution and has high evaporation
