TOnce perceived as a country that only produced mediocre cheeses, the USA
now boasts some of the world's finest specialty cheesemakers. We have
selected three of our favorites for our USA Cheese Assortment. Each is a
cow's milk variety with a long history in the business. Geographically
they are quite diverse, as one is from the East Coast, one hails from the
Midwest, and one comes from the West Coast.
Maytag Blue - Nestled in among the rolling hills of central Iowa is
the Maytag appliance factory. Down the road and around the corner is the
Maytag Dairy, which produces Maytag Blue cheese, among other, lesser-known
cheeses. Although it has been in production since the 1930's, Maytag
Blue's nationwide popularity has only recently taken off with the growing
interest in American farmstead cheeses. Thanks in part to Emeril Lagasse,
this world-class, lemony, tangy blue cheese is now featured on menus
across the country.
Cabot Vintage Choice Vermont Cheddar - As it was early last
century, Cabot is still a sleepy little farm town tucked into the rocky
soil of Northern Vermont's rolling hills. Located there is the Cabot
Creamery, a dairy cooperative dedicated to creating world-class cheddars
while supporting the hard-pressed independent dairy farmers. Established
as a cooperative in 1919, the dairy farmers actually own the company!
Cabot's best cheddar is called "Vintage Choice." Each block of Vintage
Choice is hand-selected by Cabot's president. Aged undisturbed for 18 to
24 months, limited edition Vintage Choice is complex, opulent and full of
nuances.
Vella Special Select Dry Monterey Jack - Tom Vella began making
cheese in 1931 in the Sonoma Valley of California. The company is now run
by his son, Ig Vella, and is famous for its Jack cheeses. Jack cheese was
first created in the Gold Rush Days in Monterey by a Scotsman named David
Jacks. Their Special Select Jack is sharp and nutty, hard enough to grate,
and is noted for its pale yellow interior and brown, flaky rind. The rind,
a combination of cocoa powder and spices, is one of the unique attributes
of this well-respected cheese.
