Vezzena comes from the pastures surrounding Mount Vezzena in the Trentino region, a land of mountains, extraordinary views, forests, waterfalls and meadows. Vezzena is aged in mountain caverns for over a year. It is made from partially skimmed cow’s milk and has a sharp flavor and crumbly, flaky texture. This medium bodied cheese has a slightly peppery finish. A characteristic dish offered in the best restaurants of the city of Trent is that of hot polenta with slices of fresh Vezzena cheese and covered with pan-cooked finferli mushrooms. Vezzena is also ideal for grating on pastas, risottos, and soups.
