The cheese has a smooth, creamy interior and a rich, earthy flavor with
sweet hints of clover, wild mint, and thyme. The Majors work with
farmers in and around Vermont to make their cheeses, using milk from
their own flock. The cheese is then aged in Major Farm caves for four
months by their affineur. Vermont Shepherd is only made during the
summer months, when the sheep are grazing on fresh grasses and wild
herbs, so we are thrilled to be able to offer it while it is in season.
David and Cynthia Major, of the Major Farm Dairy in idyllic Putney,
Vermont, have converted David's family’s farm into a finely tuned
cheese-producing machine. After some early misfires at cheesemaking, the
couple decided to travel to France to learn from the masters. The result
is this award-winning reserve cheese. The golden brown rind of this
simple, elegantly shaped cheese is imprinted with the dairy’s logo, a
small sheep, and a lot number.
The price tag isn't small, but this beautiful demonstration of American
farmstead cheese making is worth it.
