Arzua Ulloa:
Arzua Ulloa is a D.O. (name protected) cheese from in Galicia made from
fresh cow's milk. Nicknamed "queixo do pais" (cheese from the
countryside), it has a smooth, waxy, yellow rind and a smooth, creamy,
off-white interior.

Cabrales: Cabrales is sharp and tangy, and
even more so when made with mixed milks. Like Gorgonzola and Roquefort, it

Idiazabal:
This handmade, unpasteurized sheep's milk cheese comes from the Spanish
Pyrenees. Idiazabal is naturally smoked with a hard but edible
orange-brown rind. In the old days, Basque shepherds lived in small
mountain huts and had no space to store.

Garrotxa:
The best-known use of this ultra-rich dairy product is in tiramisu, which
means “pick me up” and is a delicate dessert made with mascarpone, liqueur
and ladyfingers. It is also delicious straight, topped with fresh berries,
or in a savory spread when mixed with anchovies, mustard, and herbs.

El Piconero al Cognac:
Made from raw sheep's milk, the cheese is carefully aged under strict
conditions for a minimum period of 10 months. The wheels are then aged
another two months whilst they bathe in Cognac. The result is a simply
