Like Tetilla, San Simon has a slight similarity to the shape of a breast but more modest people have compared its appearance to that of a dunce cap (bufone) or the shape of a mountain. San Simon is aged 2-4 weeks, lightly pressed and then gently smoked for 2 weeks after leaving the mold. Inside its red, polished brown rind, San Simon has a creamy, buttery, smoky flavor that ranges from mild to piquant.
Surrounded in the west and north by the Atlantic Ocean and mountains from the Atlantic to the Mediterranean, Galicia has always been a remote region of Spain. This isolation fostered an ancient cheese culture. Here the Galacia cows graze on the lush green pastures and bear milk that its people have been making into cheese for generations in the town of Villalba. San Simon can be enjoyed with fruit and raw vegetables and is also excellent served with fruity desserts like pies and tarts. Please call if you would like to order an uncut 2.2 pound unit.

| Galicia is known in Spain as the "land of the 1000 rivers". Those rivers cross all the region from the mountainous inland to the coast, where they form the characteristical "Rias". During the summer season, maximum temperatures are around 20 degC. Galicia's richdom in water and its Rias are characteristical for its nature. At the area of Rias Altas you will find magnific beaches, impressive towns and beautiful fishing villages. Rías Baixas are worth a visit for their natural preserves and balnearies, as A Toxa.
The coast itself offers great contrasts, from the smooth beaches of As Mariñas to the dangerous cliffs of Costa de la Muerte, the "coast of death". The climate of Galicia is tempered, and specially in winter, with minimal temperatures of about 5 degC,
quite rainy. The inland shows green landscapes and romantic villages.
