The town of Glastonbury is also known as "the ancient and mysterious Isle of Avalon," the site where King Arthur was taken to be healed of his fatal battle wounds. Glastonbury today, which lies miles from the sea in the middle of Somerset, is surrounded by lowlands. So why is it called an island? In the Dark Ages, the lowlands were below water and Glastonbury stood proud as an island towering above them. Green's cheddar comes from this ancient region, made from unpasteurized milk taken from a single herd of Fresian cows. The Green family has been making farmhouse cheddar in Glastonbury for three generations. In fact, the Green family's cheese has been a celebrity on several occasions. Their cheddar was enjoyed by the Queen during the Silver Jubilee celebrations. Also, in 1989, the Greens recreated a giant 1/2 ton cheddar which was made for Queen Victoria on her wedding day. Most recently, Green's cheddar won the gold medal at the 2000 British Cheese Awards in the Cheddar category. Owing to the raw milk, this cheese is full flavored and quite spicy. Its original form is an impressive 60 pound drum that is wrapped in cheese cloth during aging. When was the last time you ate a cheddar that had a natural rind? Perhaps never? Note: This cheese has a few naturally forming blue veins. They are edible and delicious!
