In September of 2001, in the Picon region of Spain, the very first batches
of this new cheese were produced. Made from raw sheep's milk, the cheese
is carefully aged under strict conditions for a minimum period of 10
months. The wheels are then aged another two months whilst they bathe in
Cognac. The result is a simply stunning product. Fine, aromatic and
complex, this wonderful cheese is destined to become a classic to be
enjoyed by generations to come.

All cognacs are produced from wines made from grapes grown and
harvested within the demarcated cognac region, about 100 miles north of Bordeaux
on the coast of France.
All cognac is brandy, but not all brandy is cognac. True cognacs are only from
the Cognac region of France an they are the finest of all Brandies.
