Beemster:
The rarest yet most sought after Dutch cheeses are handmade on the farm.
One of these specially cured products has been made in the southern
provinces of The Netherlands for over 800 years - Extra Aged Farmer Gouda.

Boerenkaas:
Our Boerenkaas is only made from May to October when the weather permits
the cows to stay outside and eat fresh grass. Because it is made from raw
milk, this cheese has a full, tangy flavor, with much more character than
any factory-made Gouda cheese could possibly match.

Edam:
Edam, named for a Dutch town, is second only to Gouda as Holland's most
exported cheese. It is a great all-purpose cheese, especially good when
served with dark beer. Our red waxed two pound Edam is over-wrapped in
gorgeous red cellophane, making it the perfect cheese gift.

Chevrelait:
We discovered this brand new smoked goat's milk cheese while in Holland
not too long ago. Similar in looks to Dutch Smoked Gouda, it is a
log-shaped cheese with an edible brown rind and a pale white interior.
That is where the similarity ends however, as Chevrelait tastes decidedly
"goaty".

Marigold, also known as calendula or pot marigold, was a popular ingredient
throughout medieval and renaissance Europe. In Holland, according to Gerard’s
“Herbal”, “no broths are made well without dried marigolds.”

Walnut Gouda:
A cheese you will crave endlessly, Walnut Gouda is everything you expect
it to be and more. Subtle yet flavorful, the walnut adds a sensual warmth
to the basic Gouda cheese, whose texture is not gummy like many Goudas on
the market.

Yogouda: Yogouda
has the fat and calorie content of regular Gouda, but this cheese contains
active yogurt cultures, which aid in digestion. The cheese is soft and
creamy and has the slight tang of yogurt.

The Cheese Companion
A clever "cheese wheel" symbol indicating the type of milk used in
creating the cheese, its maturity period, its pungency, and suggestions of
wines to serve as accompaniment. While this work does include a few
recipes, serious cooks will gravitate more toward Christian Teubner's The
