Buffalo Blue is the latest in Shepherd's Purse's range of specialty blue-veined cheeses. Made from fresh buffalo milk
a creamy tasting milk suitable for most people with a lactose intolerance & has almost half the cholesterol of cow’s milk.
Buffalo Blue is much whiter than her other blues but its texture is very
similar: soft and spreadable. Buffalo Blue complements both Yorkshire
Blue and Mrs. Bells Blue. Judy developed this cheese when offered some
buffalo milk by a local farmer who discovered the high nutritional
content in the milk that would benefit his son who suffers from cystic
fibrosis. This Buffalo cheese has a rich yet delicate, smooth taste which leaves the palate feeling fresh.

Buffalo milk is very rich and nutritious, in fact it is
twice the butterfat of cows milk with higher protein and vitamins,
however, the cholesterol is almost half the level of cows milk, and is
even lower than goat's milk. The buffalo give under half the quantity of
cows, but because of the quality it can be used for a wide range of
products and can be drunk by people who would otherwise be allergic to
cows milk.
