Jean Anthelme Brillat-Savarin has been revered as the
greatest gastronome the world has ever known. After the French Revolution, Brillat-Savarin spent two years in the United States. During his emigration in New York, he supported himself by giving language lessons and playing violin in a New York theatre orchestra. He introduced his newly made American friends to such things as French ices and fondue. With the declaration of "Tell me what you eat and I will tell you what you are," Anthelme Brillat-Savarin was putting to the test the "political gastronomy". When he instituted these gastronomic tests, guests dined on dishes skillfully prepared. Their reactions, comments, and delight, indicated to a host whether they were worthy of such a meal.
