Made in the French town of Brie, Boursault is a very popular double cream cheese that is frequently found in grocery stores across France. Boursault, the cheese, was invented in 1953 by Henri Boursault, and was originally made in 8-ounce drums. Keep in mind that Cheeses are living things, and they each have there own unique characteristics, even amongst cheeses of the same type and producer. The company is now owned by Boursin, which makes relatively well-known spreadable, herbed cheeses. We sell this rich, creamy delight in a 4.4-ounce drums, which is a good size for a cheese with butterfat content as high as 74%. For those of you who gasp at that number and grab onto your chests, just remember what a chef-friend of mine always told me, “Fat is flavor.” This cheese is worth every tiny bite, and besides, it could be worse... there are triple creams.

The interior is solid rather than supple and it has a refreshing citrus-like tang. The cheese has a cylindrical shape with light, white mould rind with pinkish tones.
Soft-whit, creamery cheese made from cow's milk. This
cheese has a mild flavor, reminiscent of Brie and a slight acidity. Affinage of this cheese takes about two months. The taste is smooth and almost buttery, with a hint of mushrooms.
