Malagon with Rosemary is a Spanish cheese made in the style of Manchego, a
world famous Dénomination de Origin (D.O.) cheese. It is produced in the
La Mancha region of Central Spain from 100% sheep's milk, just as Manchego
and many other Spanish cheeses are. Sheep thrive on La Mancha's dry, rocky
terrain, grazing on the abundance of wild herbs that cover the
countryside. Malagon with Rosemary combines one of the most prevalent
herbs of the Spanish countryside, rosemary, with rich sheep's milk cheese.
Our Spanish producer of sheep's milk cheeses generally ages his rosemary cheese for about 3 to 6 months. One of our favorite cheeses at any age, we noticed however that the wheels of Malagon with Rosemary at the 6 month age were a bit more sophisticated than the younger ones. During aging, the rosemary that is pressed into the rind of the cheese
imparts a wonderful flavor. The herbs also lend the wheels a rustic,
natural appearance.
This Two Year variety has a golden interior dotted with crunchy protein
crystals. Its flavor is incomparably rich and loaded with character.
